This is a great salad you can make that will last for days. Just hold off on adding the avocado until you are ready to serve it – because that is the only part that will go bad.
Why kale and why is this stuff so popular? Well, Kale is one of the most vitamin and nutrient packed leafy greens. It has an abundance of Vitamin K, Calcium and Vitamin C. So, if you are going to do a salad – swap out your iceberg or other greens for Kale. Spinach and Arugula are also good options but Kale is the best.
